I love these simple almond-milk chocolate ball cookies, since I was a little k.
Chocolate Lump Cookies¾ cup unsalted butter, softened
½ cup sugar
¼ cup brown sugar
1 egg
2 ½ cups sifted flour
½ teaspoon salt
1 teaspoon pure almond extract
1 teaspoon pure vanilla extract
2 bars (5 oz. each) Cadbury “Dairy Milk” chocolate bars, chopped
- Preheat oven to 350. In a mixing bowl fitted with the paddle attachment, cream the butter, sugar, and brown sugar until pale and fluffy, about 2 minutes. Add egg and blend completely. Add flour, salt, almond extract, and vanilla extract. Combine. Add chopped chocolate bars and mix by hand with a wooden spoon.
- Scoop out by the tablespoon and roll into 1 inch balls. Place on parchment-lined baking sheet and bake for 8-10 minutes, until barely brown on the bottom. Do not over bake.
