My Best Sandwich Creation (to date)

Last night I threw together a delicious sandwich and wanted to share it.

I used toasted Artisan Bread
Grilled chicken tenderloin (or breast)
Grilled yellow bell pepper
Lettuce
Tomato
Cheddar cheese
and the secret ingredient: Fresh & Easy's Creamy cilantro dressing (just like they have at Costa Vida).

It was yummylicious

And for dessert, we had friends come over with Pumpkin Chocolate Chip cookies (my favorite!) and the recipe was only 3 ingredients.

1 can (15 oz) Pumpkin
1 box Spice cake mix
chocolate chips (to taste)

Bake at 400 for 8-11 min.

I make those pumpkin cookies ALL THE TIME. They are so easy and so good. And once I overcooked them... left them in the oven for 25 minutes... and NO KIDDING, they were still DELICIOUS. They are no fail. Your sandwich sounds so yummy. Thanks for sharing!

It was fun to have your kids come play with us. I'm sorry they came home muddy.
Good to know about the cookies. I'll never worry about overbaking them (they were underbaked the first time I made them).
